Vegan Bite Sized Lemon Bars

  
I love everything lemon. I love lemon pie. These are pretty much lemon pie but bars, and more filling. Can't go wrong with that, right?
INGREDIENTS;

For the base
3 DL of Flour
1 DL of Sugar
1 DL of Non-Dairy Butter or Coconut Oil
1 DL of Soy Milk

For the filling
3,5 DL/ 1 1/2 Cups Sugar
0,5 DL / 1/2 Cup Cornstarch ( I used potato flour)
2 DL/ 1 Cup Non-Dairy Milk
0,5 DL / 1/2 Cup Water
Juice from 2 lemons
1 tbsp Coconut Oil/butter
1/2 tsp Turmeric for colour 

1. Preheat the oven to 180 degrees C.

2. Mix all the dry ingredients for the base together, and then add in the soft butter/coconut oil and soy milk and mix with your hand until combined and dough-like.

3. Prepare a baking tin and even out the dough, and bake for about 20 minutes.

4. While the dough is in the oven, start with the filling. Put all the ingredients in a saucepan except for the coconut oil/butter, and whisk until thickened. Then add in the butter in the end and let cool.

5. When the dough base is ready, put in the lemon filling in the crust and put in the oven for another 10-15 minutes. Then let cool.

6. Slice into small squares and sprinkle with icing sugar. Enjoy!
