Vegan Chocolate Espresso Balls/ Chokladbollar with Cookie Dough Centre

  
These are actually a Swedish tradition on the Fika table. They're called Chokladbollar (chocolate balls) but they don't usually have cookie dough in them, but I thought why not? And they turned out delish! Swedish Fika 2.0



INGREDENTS;

For the chocolate balls;
100 Grams of Margarine/Butter
1 DL of Sugar
1 Tbsp of Vanilla Sugar
3 Tbsp of Cocoa Powder
3 DL of Oats
3 TBSP of Strong Coffe
Pearl Sugar, sprinkles or coconut for garnish

For the cookie dough; 

About 100-150 Grams of Non Dairy Butter
A bit less than 2 DL of Brown Sugar
1-2 Tbsp of Non-Dairy Milk (add more if needed)
1,5 DL of All Purpose Flour
1 Tsp of Vanilla Powder
Pinch of Salt
Chocolate Chips or Chocolate Chunks

DIRECTIONS;

1. Begin with the cookie dough. 
Mix the butter with the milk, brown sugar and vanilla powder. Once it's mixed, add the flour and salt and mix again, then add in the chocolate chips/chunks. Put in the fridge to make a bit easier to roll into balls while you make the chocolate balls.
2. Mix all of the ingredients for the chocolate balls together until you can form a ball easily.

3. Roll the cookie dough into small balls.

4. Flatten some of the chocolate ball "batter" onto your hand and put one of the cookie dough balls in it and cover it with the chocolate and form into a ball. Roll it in your garnish of choice.
5. Once they're all done, put them in the fridge for a while to harden up a bit. Then enjoy!
