Chickpea Meringues


I know that I'm late to the band wagon here but I was SO skeptic towards having chickpeas anywhere near sweets. But it turned out to be AMAZING. They aren't the prettiest but they're so easy and delish!
After making these, I'm planing on creating a vegan lemon meringue pie or something....stay tuned for that....

CHICKPEA MERINGUES

Ingredients;
1,5 DL / 0,6 Cups of Chickpea water/aquafab
1,5 DL/ 0,6 Cups of Sugar
1 tsp of Vanilla Powder
Squeeze of lemon (optional)

Directions;
1. Preheat the oven to 100C (212F)

2. Put the chickpea water, vanilla powder and lemon in a bowl. Whisk with an electrical whisk until foamy. Then add sugar gradually while you keep whisking until it's a firm meringue texture.

3. Pipe out the meringues using a pipe or spoon on a tin with baking sheet.

4. Let the meringues sit in the oven for 1,5 hour. After 1,5 hour, turn off the oven and let sit for another 2 hours in the over. Store them in a dry place, like a tin or such.
