Vegan Swedish Chocolate Espresso Oreo Cake


This is a weird one to explain. In Sweden, we have chocolate balls. It's basically a sweet ball made from oats, cocoa powder, sugar and rolled in nib/pearl sugar or coconut. So I made a twist on it by adding some smashed oreo cookies and making it into a cake, instead of balls. It's delicious and super easy.

INGREDIENTS;

300 Grams of Non-Dairy Butter, room temperature
5 DL of Oats
4 DL of Sugar
1 DL of Cocoa Powder
1 DL of Strong Coffee
A few Oreo Cookies


DIRECTIONS;


1. Mix all of the ingredients together until combined. Put the mixture in a baking tin and spread out until even, or shape with your hands. Let cool in the fridge for about 2 hours or freezer for 30 minutes, until hardened.

2. Once it's a bit harder, you can sprinkle it with either shaved coconut or pearl/nib sugar. Top with an oreo cookie and you can also roll some balls to top with. Enjoy!
