Vegan Pop Tarts

Better than the original? Yes. And healthier? Well, it's vegan so...sure. It's easy to make and delish, and perfect if you have left over pie dough!

INGREDIENTS;
Leftover Pie Dough or my go to recipe;
5 DL / slightly over 2 Cups of All-Purpose Flour
3 Tbsp of Sugar
275 grams of Cold Non-Dairy Butter
1-5 tbsp of Cold Water
Filling of your choice, I used strawberry jam.

DIRECTIONS;
1. Preheat oven to about 180 degrees C.

2. Mix all the ingredients for the pie dough together and let rest in the fridge for at least an hour. Or just leftover dough, ofcourse.

3. Roll out the dough. Use a pizza cuter or cookie shape to cut out squares the same size. Then put filling of your choice in a straight line in the middle. Cover with another cut out square and press down gently, and use a fork on the sides to close it. Melt som vegan butter or use some milk to brush the dough with before placing in the oven.

4. Leave in the oven for about 15 minutes, until golden brown.

5. Let cool and make the icing, simply whisk icing sugar and a tiny bit of  water or milk until it's the right consistency.  Pour on the pop tart and sprinkle some dried strawberry or sprinkles on top. Enjoy!
