Vegan Brownie Cookies


I'm actually not a big cookie fan but I these are SO good. Probably because they taste more like fudgey brownie than cookie to be honest. But seriously, SO good, definitely give them a try! They'rep perfect with ice cream as well. 



INGREDIENTS;

120 Grams of Non-Dairy Butter
4 Cups of Flour
1 cup of Sugar
6 Tbsp of Cocoa Powder
1,5 Tsp of Baking Powder
0,5 Tsp of Vanilla Powder
4-5 Tbsp of Non-Dairy Milk
100 Grams of dark or non dairy chocolate
Pinch of salt

DIRECTIONS;

1. Whisk the butter and sugar together with an electrical whisk.

2. In a separate bowl, mix the flour with the cocoa, vanilla, salt and baking powder. Mix until combined and then add the milk and mix until cookie dough texture, and then add the chopped chocolate.

3. Let the cookie dough rest in the fridge for about 30 minutes. I am lazy and usually just let it rest for 15 minutes and that works just fine sooo

4.  Preheat oven to 180 degrees Celcius.

5. Make big balls out of the cookie dough and place on parchment paper on a baking sheet.

6. Bake for about 10 minutes or so. They should be a bit soft, they will harden once they're cooled.
