Vegan Kärleksmums - Swedish Brownies with espresso icing & coconut
So
kärleksmums ("Love-yum" in English, kinda) is bacially the swedish
version of brownies. In my opinion, at least. The only difference it that it
has an espresso icing on top, and some coconut. And the texture is a bit
cakier, so if you're a fan of cakey brownies, you should definitely try these
out! And if you're not, try them anyway. Trust me.
Ingredients;
150 grams
Vegan butter (I ran out of butter, so I opted for coconut oil. It worked out
just fine!)
2 DL/ 1 Cup
Plant-based milk (I used oat-milk)
2.5 Dl/ 1
1/4 Cups Sugar
2 tbsp
Cacao Powder
2 tsp
vanilla powder
2 tsp
baking powder
4,5 DL/ 2
Cups All-Purpose Flour
For the
icing;
150 grams
Vegan Butter
0.75 DL/
1/4 Cups Espresso
2 tbsp
Cacao Poweder
5 DL/ 2
Cups Powdered sugar
1. Preheat
oven to 200C (390F) and grease an 20x30cm baking tin.
2. Melt the
butter and add the milk to the butter.
3. Mix all
of the dry ingredients together in a bowl before adding the wet ingredients.
4. Pour
into the baking tin and bake for about 20 minutes. Once it's out of the oven,
let it cool.
5. While
the cake cools, make the icing. Melt the butter, and add all of the other
ingredients in until it's smooth and soft.
6. Once the
cake has cooled of, spread the icing on top and finish of with some coconut.
Let the icing set, and then dig in and enjoy!
