Vegan Double Chocolate Banana Cake




Sooo.... we made a blog! Some of you might know us from the account "imhorngry_" on instagram. We are a vegan couple from Sweden who loves to eat. That's pretty much it about us. We also travel a lot and are planing a move to Dublin, so if you want to follow our vegan journey together, you are very welcome to do so!

Anyway, enough about us. Let's start blogging! And what better way to start the blog of than with a double chocolate banana cake recipe? That's right, nothing. So let's roll. Or bake. Let's bake.


It's not the prettiest coating, but it's beautiful on the inside. Trust me.


Cake bottoms

Dry ingredients:
4,5 DL of all-purpose flour
4,5 DL of white sugar
2 DL of cocoa powder
3-4 tsps of baking powder
1 tsp of vanilla powder
Pinch of salt

Wet ingredients:
4 DL of non-dairy milk, I used soymilk
0.5 DL of vegetable oil, I used rapeseed oil
2 tbsp of apple cider vinegar
1 tbsp of vanilla essence

Frosting:
2 DL of vegan butter/margarine
2,5 DL of powedered sugar/icing sugar
0,5 dl of cocoa powder
Some vanilla powder
1-2 tbsp of non-dairy milk, if needed

Directions:

1. Preheat your oven to 180C (350F). Grease two 20 cm (8 inch) baking tins OR cut out parchment paper to fit the bottom of the tin.

2. Mix together all the dry ingredients in one bowl. Whisk the wet ones in another, and then pour in the wet into the dry, and mix together completely. Pour half of the batter into one of the pans, and the rest in the other. Bake for about 30 minutes. You can stick a toothpick in the cake to see if it's ready - if the toothpick is clean when it comes out, it's done!

3. While the cakes cool completely, mix together all of the ingredients with a hand whisk to make the frosting. I doubled the recipe because I wanted more frosting on my cake (I ate like half of the first batter tbh).

4. Drag a knife around the cake to get it to loosen up, then flip it over with your hand on the cake to get it out. Spread frosting on the first layer, add some bananan, strawberries, blueberries or whatever you want to put in your cake, and then add the next layer. Coat the entire cake in remaining frosting.

5. Let set in the fridge for a while. Eat the entire thing in one sitting. Enjoy!
